Something about the holidays just makes it seem like making cookies are the right time to make them. And to be honest, I haven't made cookies in for what seems like forever! I usually only make cookies around this time, though, I should learn to make them more often since I love cookies! But I have the habit of buying my cookies and not making them myself.
Today, I had several cookie recipes I was looking at and there were so many I wanted to make, but was only to choose one. I didn't want to make regular old chocolate chip cookies, nor did I feel like having my favorite cookie, a snickerdoodle. I wanted to make something I hadn't had in some time, or don't normally have. In the end, I wanted to make a chewy chocolate cookies with my favorite chocolate inside; White chocolate chips!
These cookies baked wonderfully and turned out just right. They were so chewy, so chocolatey, and so delicious! I think everyones going to be having a hay day over these cookies. They're just so good.
Recipe
1 3/4 cups flour
1 1/4 cups cocoa powder
1 cup white sugar
3/4 cup brown sugar
2 tsps. baking soda
1 cup butter
2 eggs
1 tsp. vanilla
1/4 tsp. salt
2 cups white chocolate chips
1. Preheat oven to 350 degrees and grease cookie sheet.
2. In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add eggs one at a time, beating well with each addiction. Add the salt and vanilla.
3. In another bowl, combine the flour, cocoa and baking soda and gradually add to the creamed mixture. Fold in chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheet.
4. Bake for 8 to 10 minutes until fluffy but still soft. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Yields about 36 cookies

yep, I know what you mean - every though I DO bake EVERY SINGLE DAY (no joke, as evidenced on my blog, haha), there's something about the holiday season that really makes me want to bake even more! your cookies look fabulous - chewy cookies are the best kind!
I'm baking these cookies right now and they are not expanding...? What am I doing wrong?
I am having the same problem - mine are not expanding but coming out flat - they taste great but don't look too pretty? Any ideas.
I made these cookies and they fluffed up but I use an icecream scoop and make sure I put a good glob of dough on the cookie sheet. This ensures that the dough doesnt spred to thin and rember to let them sit on the sheet before transfering them thats what keeps them chewy. A good amount of cookie dough makes for a thicker cookie.

Heavenly. Love these! I had been using the recipe off the bag of white chocolate chips, but they always turn out real dry, so I googled and found you! Yea!! This is what white chocolate chip chocolate cookies are supposed to taste like!

I substituted a teaspoon of coffee powder for vanilla, as I had run out, and this version was AWESOME. Wooh improvisation!
Pretty fantastic chocolate fix :) ... i'm writing this as I eat them at my computer desk!
instead of 2 cups of white chocolate chips I threw in some dried cherries, white chocolate chips, and milk chocolate chips.
Mine fluffed up and didn't spread out too much at all.
